BAGELS are not usually synonymous with WEIGHT LOSS and I haven’t had a “real” bagel in YEARS! The gluten is a problem for me (bloating my belly and ruining my skin), but even if it weren’t for that, the average bagel carries about 48 grams of carbohydrates, and that is just for a plain one. A normal blood sugar is about 4 grams of sugar so I don’t want to eat something 12 times my normal blood sugar! Imagine how high the sugar content climbs with cinnamon raisin or chocolate chip! Oy vey! Not worth the belly bomb to me. I like experimenting with alternatives to foods we love. It is what helps me, my family and my clients use nutrition as delicious nourishment instead of focusing on the “can’t haves”. I have made several food items using the coveted low carb option, almond flour; like Amazing Bread and gluten-free quiche but when a nutrition client recently posted this bagel recipe in our private group page I knew it had potential for scoring a home run in my house! Since the recipe only has five simple ingredients that I happen to have them on hand this morning so …20 minutes later I had my verdict! Two Thumbs up! Now, without further delay let me introduce the gluten-free, keto-friendly bagel! Tadaa! (Don’t judge me on their lack of pronounced hole in the middle, I will get better at forming them!)
Guilt-Free Ketogenic Bagels

Ingredients
1½ cup almond flour
1 Tbsp gluten-free baking powder
2½ cup organic mozzarella cheese (I used Mexican shredded cheese on my first try and it as yum!)
2 oz cream cheese (cubed)
2 large eggs (beaten)
Instructions
Preheat oven to 425. Cover a baking sheet in parchment paper. In one bowl combine almond flour and baking powder (I used ¼ tsp cream of tartar per teaspoon of baking powder because I didn't have it on hand during this first try... I will see which rises better in later attempts). In a glass bowl combine cubed cream cheese and shredded cheese and microwave for two minutes stopping every 30 seconds to mix. Mix melted cheeses together very thoroughly. Beat eggs in a small dish and add to almond flour and baking powder. Add those contents to the melted cheese bowl and knead into a dough. Form 6 bagels and place on parchment. Bake for 8-12 minutes until golden and cooked through in the center.
