I love fall and winter and miss it tremendously now that I live in FL. I seek out cold weather trips usually in December and January just to have a taste of the North again. In honor of those who do get to have seasonal changes, here is my go-to seasonal coffee recipe I am in love with this year.
PUMPKIN CARAMEL COFFEE
You will need a blender and the following ingredients:
2 cups hot organic coffee (ideally)
3-4 Tbsp heavy whipping cream (or more if you love it creamy!)
1/2 tsp pumpkin pie spice
2 heaping Tbsp of low carb caramel sauce (get the caramel sauce recipe and more holiday inspired low carb recipes here)
2 Tbsp pumpkin puree (organic if possible)
Pour in coffee first. Add in the rest of the ingredients. Blend on low and gradually increase to a higher speed to forth up the “latte”. If you start out on high speed you stand the chance of the coffee blowing the lid off the top and wearing your creation instead of drinking it. (Video demo below)
