    Beef + Bean Chili

Here in Florida, “winter” weather is anything below 84 degrees! So, the first day in the high 70s I broke out the meat and beans for my first ever attempt at homemade chili. With organic ingredients and grass-fed meat I was able to bring each LARGE, hearty serving size to around $2.70 each. Which beats the heck out of the $6 a bowl at local restaurants with who knows what kind of ingredients and $10 a container at the Wholefoods soup bar. Be forewarned my spice measurements a

Super Simple Steak in the Oven

Pulling out the grill on a HOT (98 degree) night in Florida is the pits! SO… this mama turned to the broiler and easy seasoning for a quick and simple nourishing meal for the family. For how to do the potato side dish see my meatloaf post at the bottom HERE It is important when choosing meats to do the best you can to get organic and grass-fed. What that animal ate, what was injected and how it was treated is imperative to your long term health as well when eating animal prod

Better than Mama’s Meatloaf (gluten free)

I can’t recall loving meatloaf growing up. Quite frankly the concept seemed pretty unappetizing, but I wasn’t a huge red meat eater (but my family was). Not too year my husband was recalling his killer meatloaf recipe he used to make, but couldn’t quite recall all the ingredients. Always wanting to be a good wife who shows she listens and cares, I set out to make my man a pretty darn good meatloaf, but one that I could also eat and try to start enjoying as a go to protein for

BEST Low Carb, Gluten-Free Bread… EVER

I have tried and failed many attempts to make a “faux bread” before. I love love love bread, so that is the hardest thing for me to steer completely clear of, but these days I am too nutritionally savvy to continue to pump my body full of gluten, high fructose corn syrup, soybean oil and whatever other junk most breads now come laden with. So I went on the hunt to find a substitute for store bought bread that actually tasted like bread and had that nooks and cranny, doughy te

Pesto Parmesan Chicken on Zucchini Noodles

This super simple bad boy was created out of a carving for pesto one night. While I pretty much never do real pasta anymore, I do enjoy a great pesto sauce and pesto reminds me of great Italian pasta dishes. Instead of doing damage to my body with a high influx of carbs, I whipped out the veghetti maker and loaded up of nutrient and water packed zucchini noodles.  In less than 18 minutes, I was putting dinner on the table and getting rave reviews on the meal. Baked Coconut Chicken Bites

I announced the launch of a new flavor of Half/Baked this week during Cyber Monday and I have been up to my eyeballs in coconut order fulfillment. In the spirit of this fruit/nut/seed I decided to carry the sweetness over into the dinner hour. Enter Baked Coconut Chicken Bites. Mind you I am horrible with tracking measurements when I am in “experimental-creation” mode. Partly becuase I don’t always expect it to turn out well enough to want to repeat it, but mostly being preci
